Instant Pot Chicken and Easy Handmade Tortillas

This, my friends, is pub grub perfected. You can scale this recipe up to feed a bunch of good friends or ravenous kids, and the handmade tortillas are super easy and super worth it.
We've never met a taco we didn't like, but we absolutely love these suckers.
Ingredients —
Marinade:
- 1/2 cup of Feisty Spicy Struggle Bus Mix
- 1/2 of a lemon - juiced
- 1/4 cup of water
- 1 tbsp Worcestershire sauce
- 1 tbsp chopped garlic
- 1/2 tbsp white wine vinegar
Chicken:
- 3 frozen chicken breasts
Tortillas:
- 2 cups masa harina
- 1½ cups of Struggle Bus, plus a little more to keep things hydrated
- healthy pinch of sea salt
Directions —
For the chicken:
1. Combine all marinade ingredients together in a small bowl. That's literally all you do here.
2. Pour ⅓ of the marinade into the bottom of your Instant Pot or pressure cooker.
3. Set the chicken breasts on top of the marinade and pour the remaining ⅔ of the marinade on top of the chicken.
4. Cook on high for 12 minutes* and let the pressure cooker release for 10 minutes*.
5. Shred cooked chicken with a fork and grab a tortilla.
*Cooking times may vary. Please use the manufacturer’s recommended cook time for your pressure cooker.
For the tortillas:
1. Combine masa harina, sea salt, and water. Add water a teaspoon at a time until it feels like a thick cookie batter.
2. Cover and set aside in a cool spot (like the fridge) for 20 minutes so.
3. Heat your favorite skillet to a good medium hotness. Cast iron is our go-to.
4. Pinch off...uh...pinches of the dough and roll into golf ball sized dough balls. Store these under a damp towel so they don't dry out.
5. Slap a dough ball between two pieces of parchment paper, then use a tortilla press, rolling pin, or your palms and fists to press the dough ball flat.
6. Splash or spray a tiny bit of oil in the pan, then slap the tortilla in there.
7. Cook about a minute, then flip. It might puff up like a little balloon. This is a good thing.
8. Swaddle the fresh tortillas in a clean kitchen towel. For extra style points, use a tortilla warmer.
Combine everything into taco shapes with your fav taco toppings. Try not to eat 500 of them.
